I'm constantly asked "What's your favorite cake that you've made?", and my answer always is "My latest cake is my favorite cake!"
Nothing keeps me more engaged than trying new techniques, products or recipes...it makes my work fun!
When it comes to cake trends, I follow bloggers, planners, venues and top cake artists...but no one keep me more informed than my own clients, who always bring references of what's in!. It cool to see trends consistently show at my cake consultations!
Rustic chic cakes or naked cakes have been popping out at the consultations for a while and I can't wait to come up with my own beautiful creation that includes a naked cake!
But for now, here's my carrot cake with it's beautiful caramelized crust partially covered by my mascarpone italian buttercream....so delicious!
Some of the considerations to have for naked cakes is preservation of the moisture of the cake, and the exposure to air and temperature of the displayed cake. A carrot cake is a perfect candidate, because it's an oil based cake that is rich and super moist, it also develops this beautiful crust that is so appealing to the eye!
My fingers are crossed for one of my clients to challenge me to create the most delicious rustic chic naked beauty!
