In Lesson 1, I will introduce my signature rolled chocolate recipe and talk about the differences between rolled chocolate and fondant, and explain why my chocolate is ideal to cover smooth and precise cakes with the paneling method. My personal journey: Learning to make Sugar Flowers took a while!
Sugar flower making is one of the things that I enjoy most, but to be honest, it took me a WHILE to learn how to make them. It was a long journey, until I understood three fundamental things that I believe are key to success in the sugar flowers process.
1. One is using the RIGHT gum paste recipe (this is half of the battle!),
2. Choosing the APPROPRIATE drying method for your flowers, and of course,
3. Having the right INSTRUCTION!
Maggie Austin: Will knock your socks off. Period.
If somebody asked me one day, you can only have ONE favorite female cake designer in the world, who would it be?, I would answer without hesitation: "Maggie Austin"!!!
I believe that this artist is the ultimate sugar artist, and I adore everything she does...so maybe, your will find these lines biased. You have been warned!
WHAT I LEARNED FROM THESE CLASSES: That sugar flower making has to be liberating, not constraining. I understood from her that you -the artist- is in charge. Make your own petal shapes; shape the flowers however you want and DO NOT rely on fancy tools. I adored her approach to flower making and left the class inspired to do my best sugar work possible.
James Rosselle: Regal and Sophisticated!
Now, if I were asked who is my favorite male cake designer, I would have to say Ron Ben Israel. I probably would faint if I ever meet him in person. James Roselle used to work with Ron, and I see SO MUCH of Ron's aesthetic in him! The best part is, that James has developed his own style...which I find simply stunning.
WHAT I LEARNED FROM THESE CLASSES: That sugar flower making is about composition. James beautifully illustrates in his classes how to make and compose statement flowers that work beautifully by themselves or as part of a whole. I have certainly incorporated some of his philosophy into my own, and I own that to his classes.
Jackeline Butler: Be inspired by a true Sugar Flower Pioneer.
Jackeline's class "Handcrafted Sugar Flowers" was the first online class that I ever took. I was just marveled by the beauty she could create...and how easy she made it look!. Even though my own personal flower making style is different to hers, I SO very much admire her work!
WHAT I LEARNED FROM THESE CLASSES: That learning to make sugar flowers is a progressive acquisition of skills. That all you have to do is jump in and enjoy the process! I also learned her "production line" approach to flower making, and that is something that I have fully incorporated to every aspect of my work and my business.
Nicholas Lodge: Be inspired with SO much knowledge!
When it comes to sugar flower making, NOBODY is more knowledgeable that Nicholas Lodge. Period. His proprietary gum paste recipe changed my flower making experience, and is to date the only gum paste recipe I make.
WHAT I LEARNED FROM THESE CLASSES: Discipline and strive for Excellence, and Structure. His classes are comprehensive, and I always left the class empowered to jump in and try my best following his proven methodologies to achieve success.

In Lesson 5, you will learn how to make my beautiful statement rose, as I show you how to create petals from a simple round cutter, and dry them in a variety of shapes to create roses big and small, in all stages of bloom!
