In Lesson 1, I will introduce my signature rolled chocolate recipe and talk about the differences between rolled chocolate and fondant, and explain why my chocolate is ideal to cover smooth and precise cakes with the paneling method. In this class I will show you how I make, roll and store chocolate panels to cover my cakes; we will talk about my favorite techniques to decorate chocolate panels ahead of time, and how to pre-roll sugar ruffles for easy application. We will also talk about making beautiful floral appliqués and I will demonstrate the foundation of my signature statement flowers and fillers!. This is a technique based class, where I teach many of my signature techniques used in my favorite cake designs, including these three all time favorite cakes! In lesson 2, I will also show you how to achieve the beautiful marbled look of this cake!...it is so easy, and your marbled panels can be made ahead of time and safely stored and ready to go until it is time to apply them on the cake....How cool is that?. Then I’ll show you how to wrap your cake in your precut panels for stunning results every time!. The two 3-tier cakes on the bottom right were my hero and step out cakes, used in the class for the demonstration!!! In Lesson 5, you will learn how to make my beautiful statement rose, as I show you how to create petals from a simple round cutter, and dry them in a variety of shapes to create roses big and small, in all stages of bloom! In lessons 1, we will cover all my tips for rolling, trimming and storing chocolate panels to cover your cakes!...Of course that my rolled chocolate recipe is included! In lesson 2, we will talk about the many techniques I have developed to pre-decorate my chocolate panels; we will cover my make ahead techniques to texture and paint chocolate panels, and I will show you how to achieve the beautiful Tulle texture look of this cake! Best of all we will talk about how to store your decorated panels...talk about efficiency! In lesson 3, you will learn how to make-ahead these beautiful floral lace appliqués!...I love them so much, and I'm sure that so will you!
