It's hard to believe that there are only 10 days to X-mas!!!...Here in this kingdom, we are in a full holiday mood!
To celebrate the anticipation of Christmas, we made these Holiday figurines. They were designed to be stand alone cake toppers (4" round base), intended to be preserved.
Our sugar medium was primarily fondant (with added xylose powder). Some of the accessories were made with gum paste and modeling chocolate, accentuated with edible sprinkles and edible dusts!

From Wedding Cake to Surprise Birthday!
We were thrilled to receive a phone call from one of our favorite brides from last year, asking for a surpass birthday cake to celebrate her mom!
Our idea was to create two tiers of the most delicious "Fine Gift Boxes" filled with her other's favorite things: Family, Golf and Buckeyes love!. The venue chosen for this event was Kenwood Country Club, and there were golfers everywhere!
For this special occasion we freshly baked a light Orange Cake, paired with alternated tiers of Lemon Curd and Raspberry Mousseline!

I couldn't resist the temptation of squeezing in this order for a dear friend, fellow vendor and most amazing entertainer Greg, his wife Casey and their adorable kid, Boe.
Greg is owner and head singer at Greg Lee and the Chuck Taylors...THE band to rock a party!
It is my goal to always try something new on every order, and on this one, I tinted the cake batter BLUE!.
Colored cake is a trend that I have seen come and go...and this just felt like the perfect order for a two toned Blue layered cake:).
Of course, I don't have pics...or the client would have gotten a half eaten cake...but just by Casey's feedback, I think that coloring the cake was a big hit "..the inside was a big surprise for everyone! Everyone was wowed when they saw it including Boe...everyone who tried the cake did commented on how delicious it was!"
Dulce de Leche is one of the flavors that I mostly remember from my home country Venezuela. It is a rich version of an American Caramel. Every South American country has it's own version of it, and they are all DELICIOUS.
Dulce de Leche is very rich and has not enough body to make a thick cake filling. We love to pair Dulce de Leche with thin layers of Almond Cake...our own take on a Smith Island cake...South American style:)

We were thrilled to receive a call from Samantha's mom requesting a petite surprise birthday cake to be presented to Sam at her sister's rehearsal dinner. I'm already on board designing Samantha's own wedding cake, and have had the pleasure to present my ideas for her cake and getting to know them:)
Sam is truly sophisticated and modern...with that in mind, I thought that making a "Sequins and Ranunculus" cake to celebrate Sam would be perfect!
Inside this beauty was our toasted almonds cake paired with a praline mousseline alternated with line layers of chocolate ganache.
Wafer paper ranunculus and leaves adorned the cake. We highlighted each petal with silver paint and sprinkled a few tiny dragees to adorn the centers!
What I LOVE about wafer paper flowers is how whimsical they are. Wafer paper is a potato starch based edible paper and is a bit translucent.

"Midnight Monster"...a surprise Groom's Cake that Veronica ordered for Michael!
We were told that this is what he becomes at night, a true "Midnight Monster :), and to celebrate that, we freshly baked four tiers of chocolate truffle cake paired with chocolate ganache and peanut butter mousseline, iced in our custom made rolled chocolate!!!
This cake was a surprise to be presented to the groom at the after party at one of our cool new venue, The New Riff.
To guarantee the safe transportation and integrity of the cake, we chose to use two masonite boards as a base and a metal treaded rod as structure to support the top suspended tiers. The total height of the rod was 24".
Washers and bolts support the top two tiers. Food safe PVC piping isolates the edible cake from the metal rod:).
The main character of our design is Mr. Midnight Monster, who was made out of rice crisps and covered in rolled chocolate, and then airbrushed with edible paint.
He is sitting on his on little board and can be preserved...I don't think that they will have the heart to eat him:)
To add to the yumminess of this cake, we added some of our from scratch truffles and cookies:) The "tissue paper" that line each tier was made of very thin sheets of rolled chocolate. Nothing compares to the taste and flexibility of rolled chocolate, also known as modeling chocolate!

We are always up to the challenge and love to please our clients with all sort of creative ideas. This time we were asked to create a replica of our client's fishing boat to celebrate his 60th birthday!
To add to the challenge, this cake had to be designed to travel because our client planned to transport it out of state!
We started by decorating a double masonite board with textured chocolate to simulate water and some cute fish that were wet painted with luster dusts. Our original idea was to layer melted isomalt to the hardened chocolate to create a cool water effect, but were worried about the weight that this would add and its reaction to humidity and temperature changes!. After some serious consideration, I decided to replace the melted sugar by a thin layer of confectioners glaze that would provide shine without the weight!
Our client's daughter was turning 25, and her mom wanted to celebrate with a surprise birthday cake that was filled with her daughter favorite things!
For them, we designed the coolest birthday "Crocodile skin bag" filled with our client's favorite things all made out of chocolate, plus layers of the most delicious Red Velvet Cake, paired with White Chocolate Mousseline!
We replicated her daughter's french Bulldog pets, Tulip & Petunia that were sculpted in chocolate and then airbrushed with food grade paint. They were the perfect touch for this personalized birthday cake!
We set the "birthday bag" on a decorated board that simulated wood planks:). Tulip was placed over a separate small board, in case our client wanted to preserve her!
Tulip turned out SO cute...and her sweet aroma was irresistible!. I think that for the first time, we made something that was "too cute to eat"!!!

To kick of this wedding weekend bash, Rachel ordered Tim's fave "Caddy Shack" movie represented in cake!
Inside is the most delicious Chocolate Truffle Sponge, paired with Belgian Chocolate Ganache and White Chocolate Mousseline:)
It was really fun to work on this cake and recreating the humor of this movie!
Tim is an avid golfer and many of his friends are too! I received feedback from Rachel's mom saying that professional golfers attending their rehearsal dinner were besides themselves with a Caddy Shack cake!

I've always been in love with lighthouses and starfish.
It's been a dream of mine to create the most delicious nautical themed wedding cake, and finally, I got a request for creating one!
Not only the client is a favorite repeat client, but her events, always, ALWAYS are amazing.
With this order, she intended to recreate a "Nantucket" themed bridal affair,
This cake not only looked beautiful on the outside...it looked and smelled, even better inside, because my most moist and delicious Almond Sponge was paired with a heavenly Praline Mousseline with Crunch and layered with Semi Sweet Belgian Chocolate!
The venue was the sophisticated and gorgeous Camargo Country Club, and it was held on a terrace overlooking the in the fairways of their golf course. The afternoon was so pleasant, the weather couldn't be more perfect!

A cake designed to travel...by plane!
I have to confess it, I love challenges.
Four years ago, when I started this small business, I thought that I would be getting to a point where I would do so much repetitive work, you know, same themes...same techniques...I couldn't be more wrong!
Each client, for the past four years, has brought to me a new and unique challenge. After all, each celebration is unique!
A new client, who had been referred by one of my most beloved repeat clients, approached me with the challenge to make a graduation cake that had to travel by plane.
As you may imagine, she wanted to incorporate typical elements of a graduation cake: a mortar board, a diploma, etc.
I have recently completed my first sculpted cake ("Gigi" for an SPCA event)...and I wanted an excuse to explore more sculpted work!
The recipient of the cake was graduating from Vanderbilt University and had been offered a position on a Petcare branch of a large company....so the idea of incorporating a sculpted dog came to mind!. The selection of the breed was ano brainer because my client and her family are Bulldog lovers..."Bulldogs are an acquired taste", said my client at our tasting and consultation meeting.
I perfectly know what she was talking about, because my dad had one when I was in Highschool...and oh my, where to start? . His name was "Lawyer".
Sculpting the dog was not overly complicated. I had a collection of images that I had downloaded from the web, that assist me in understanding features and proportions.
The problem I had was that with the intention of replicating the foldings and crevices of a real bulldog, I had made this one look MAD; so mad that it looked that it was about to attack you!!!
I immediately thought about my client's reaction while opening the cake cooler!
Softening its features gave me some grief, but it was the perfect opportunity to learn more about sculpted work.
I wanted to achieve a "bored" and "sleepy" look on Mars face....adding more eyelids, and softening his forehead did the job!
For those of you curious on "how to transport a cake by air", I can share that I only offer this service when it will be conducted by private transportation.
The cake travels refrigerated on a cake cooler until its final destination. there are some bakers and designer that I follow and admire that do this via public transportation, but I haven't been able to figure out how they do it!

Good Morning everybody!
I just wanted to share with you my first sculpted dog cake :). It was ordered by a repeat client who chaired the fabulous "Fur Ball" Gala for SPCA Cincinnati. I started working with her a few years ago as her wedding cake vendor, and have made many, many cakes for her!
Instead of making a grown up dog, I thought that it was a good idea to make a puppy along with its adoption certificate!...after all, that is such an important component of what SPCA does!
I named my puppy "Gigi", because that is one of the MANY nicknames that I have for my daughter Valeria,
My puppy was covered in Ivory Fondant, airbrushed and them accentuated with dry dusts. Her name tag was made out of gumpaste, for rigidity. Eyes nose and her little tongue were a combination of fondant and gumpaste, also known as 50/50.
Most of the texture of the dog was made with an impression mat that I made from scratch. Not only I did not want to spend on a commercial mat, but also, found that the ones our there had a scale that was not appropriate for the look I wanted for the puppy. Making this mat was so simple, and SO affordable!
Gigi is sitting on a cake pillow that was baked on a pillow cake pan....that saved me some valuable time, since I didn't have to sculpt the cake; it also saved cake that didn't have to go to waste!
It was the first time I used this mold, and I highly recommend it...baking on it, was a piece of cake!
