 "How much does that cake serve?" Questions related to the size and number of servings on a cake tier are by far the type of questions I get asked most about by clients, and I totally understand why! It's really difficult for somebody new to the cake world to guess the relation of tier size to the number of servings it yields. Cake professionals like myself simply follow charts provided by the cake pan's manufacturer of our preference. However, the number of servings on a tiers are also dependent on:
1. How large you cut the slices,
2. The height of the cake tiers and
3. The size and shape of the cake itself.
Not only I think that it's better to be on the generous side to ensure all of your guests get a piece, but also that NO cake should ever go to waste! I work too hard for that!
Size and alternatives for cake configurations are the first thing I share with my clients during our initial consultation. After all these years in business, I have created hand drawn graphic charts that illustrate and compare potential ideas for the stacking of cake tiers.
We start with the traditional incremental stepping, for a traditional look, to more contemporary ideas that include double stacked tiers of the same size, or even variations in the height of different tiers.

Yes, it sounds like cliché, "Life is about the journey, not the destination", but the truth is that the destination is never guaranteed. I remember what was going through my mind when I stepped into the Craftsy studio and we were about to start filming. I had that slip second thought, "You can run away!". No, I won't. I've planned, rehearsed, prepared, and work hard, so rather than running away, I'm going to enjoy every moment of this. And so I did.
Oh, and the story of the flying pig: Cincinnati was known as "Porkopolis" because of its strong pork processing industry. Every year it hosts the "Flying pig marathon". Sculptures of flying pigs decorate the city. Coincidence or fate, I love piglets! So Mr. Sugar Realm one day surprised me with a replica of a flying pig sculpture, "For the day you own your shop", he said. As for now, it decorates my studio, and is by far my favorite feature there, because it is reminder of enjoying every moment, like the one we had when he have me my own flying pig.

Work hard, make it Happen. Those picture frames that you see in the back, are the first thing I see each morning, as I come down the stairs and start a full day of work. I call it my "Wall of inspiration". It's a collage of publications that I rotate often, as copies of new publications of my work land in my hands. National, local, big or small, all are special to me. The funny thing is that behind each one, there are many stories to tell. Stories about the effort that took to complete an order, special requests from the client, and the satisfaction of having help someone celebrate a special milestone in their lives. I think all of us should have a "Wall of Inspiration", because I know for a fact that every single one of us have many things to celebrate. One that features the special things in your life. And if you don't have one yet, maybe this is the time to start it!

1. I'm self-taught. Internet has been my teacher.
2. Yes, I've donde cakes for "celebrities", and delivered cakes to be transported by private airplanes. However, every client is VIP here.
3. No, I don't have cake in my family kitchen all the time. One, I would eat it all! and Two, I would feel guilty about my family's diet.
4. I prefer cake to buttercream. Maybe it's because of the influence of European style baking I grew up with.
5. My most favorite tool is my bench scrapper. I use it to ice my cakes, and it allows me to achieve smooth, and perfectly iced tiers.
6. I love almost everything about this job. Designing and making sugar flowers are my FAVORITE, Delivering cakes, not so much!
7. Yes, Mr. Sugar Realm loves my cakes and is my biggest fan. I met him first day of college, it was love at first sight!
8. Being my own boss is what I cherish most about this job. It allows me to have balance between work and family, which is paramount to me. My kids and family comes FIRST. ALWAYS.
9. I don't wear a uniform, but you will probably see me wearing black most of the time. Half of my closet is made of black clothing. Black is what designers should wear, right? (I bet my family could tell you the story about my "Benetton" black sweatshirt. LOL")

2020 threw a curve to all of us. In a matter of weeks, I saw client after client, cancelling, rescheduling, or going micro! But I'm not someone to stay stuck too long, so I decided to adapt. Most of my time these days is spent teaching or receiving classes on line. I even completed a Life Coach certification!. For example, those sugar flowers on the back, are samples of new techniques that I'm perfecting! They are not there yet, but I'm excited to keep trying! You will see!
Oh, and I'm also learning to make videos of my work. Blame my brother and my nephew. Their idea!

El 2020 nos agarró a todos desprevenidos. En pocas semanas vi cómo mis clientes, uno tras otro, canceló,  movió para el año que viene o decidió hacer una micro celebración este año!. Pero no soy una persona que se lamenta por mucho tiempo, así que decidí adaptarme. La mayoría de mi tiempo en estos días, la he pasado enseñando o tomando clases en línea. Hasta me certifiqué con Coach Integral! Por ejemplo, esas flores que vez allí atrás, son muestras de nuevas técnicas que estoy probando, no me quedan todavía como quiero, pero ni importa, porque pienso seguir intentándolo! ¡Ya verás!
Ah, y también estoy aprendiendo a hacer vídeos de mi trabajo. Échenle la culpa a mi hermano y mi sobrino. ¡Su idea!

Hello, my name is Ileana Saldivia. I'm the face (and the hands) behind these creations. The other day, I was consulting with my business savvy little brother, @elgordocircuito, who disciplined me, and brought to my attention that he couldn't comprehend why my face was nowhere to be seen in my social media strategy!. "Show more of who you are!...people want to see how you do this!", he said. Yes, it's true. I'm pretty private, I thought, but I also love to talk about what I do! So thanks to him, I will dedicate this week,  to share a bit about myself, and I hope you will share a bit of who you are as well! So here it goes.
I'm an Architect by trade who as a teen, dreamt of becoming a pastry chef. Many ears after, and after baking my daughter's first communion cake, I had an Aha! moment, and traded a corporate job as a senior designer in an architecture firm, for the prime position of "Queen" of this Sugar Kingdom.
You may not know this story, but the reason why I named my business "Sugar Realm" is because my last project  in architecture (a themed park in the Dubai) was organized into 5 "Realms" or kingdoms. The day I decided to form this company, I thought: "I will create a kingdom all for myself, one where my imagination will rule. A kingdom to dream and celebrate with others, special moments in life". This is my sugar kingdom. Thank you for being here.

Hola, mi nombre es Ileana Saldivia. Soy la cara (y las manos) detrás de éstas creaciones. El otro día, le hice una consulta a mi hermano, @elgordocircuito, quien es un experto en el manejo de redes sociales. Después de regañare un poco, me dijo: "¡No puedo entender por qué no compartes más sobre tí!, ¡La gente quiere ver cómo haces lo que haces!". Si, es verdad, soy una persona privada, pensé, ¡pero también es verdad que me encanta hablar sobre lo que hago!
Mi profesión es la Arquitectura, y de adolescente soñé con ser Chef de pasteles y dulces. Muchos años después, al hornear y decorar el pastel de la primera comunión de mi hija, tuve un momento de ¡Eureka! y decidí cambiar mi trabajo corporativo como diseñadora en arquitectura por la posición de "Reina" de este reino de azúcar.
Probablemente no sepas ésta historia, pero la razón por la que llamé a mi negocio "Sugar Realm" o "Reino de azúcar" es porque mi último proyecto en arquitectura (un parque temático en Dubai), estaba organizado en 5 "Realms o "Reinos". El día que decidí formar mi compañía pensé: "Voy a crear un reino donde mi imaginación y creaciones ayude a celebrar los momentos especiales de la vida". ¡Éste es mi reino y estoy feliz de que estés aquí!
