For them we freshly baked the most delicious Vanilla sponge, paired with alternated layers of strawberry and lemon curd mousseline, and a personal favorite, Almond sponge, paired with dulce de leche and white whole mousseline!
As always, iced with our signature rolled chocolate. All decorations where made out of chocolate and the sugar flowers were intended to be preserved!

Nothing brings me more joy than customizing cake combinations for my clients. Often times, they chose from my menu of best selling combinations. Every now and then, we work out together combinations that tell their stories, and become new best selling flavors!
For this occasion, our client wanted a touch of chocolate, paired with the flavors of a candy bar...but it had to be sophisticated and wedding like!
After listening to her flavor preferences, we new that this cake would be glorious!

I always dread having to make Lettering out of sugar because it is cumbersome, but not anymore! Make your own molds just launched a new line of silicone letter molds called Flexabets...wich I used to make this cake. So easy to use!!!!

My favorite part of this job is to meet with new clients and share with them the excitement about their wedding. I love hearing and seeing their vision for this memorable day. The architect in me loves the challenge of designing something unique, absolutely tailored for a specific event. I find it so rewarding when our cakes feel like they "belong", and that it couldn't be displayed anywhere else, because a part of the story would be missing. Today's wedding cake was basically an interpretation in sugar and chocolate of Mindy's vision for her wedding. I LOVE the color palette that she chose: fresh and stylished, absolutely glamorous and perfect for the time of the year!

Countdown to the launching of my Craftsy cake decorating class has officially begun!
In Lesson 1, I will introduce my signature rolled chocolate recipe and talk about the differences between rolled chocolate and fondant, and explain why my chocolate is ideal to cover smooth and precise cakes with the paneling method. I will demonstrate how to roll, trim and store pristine and oh-so-delicious chocolate panels, until it's time to apply them to the cake!. Below are a few screenshots from Lesson 1!!!

In this class I will show you how I make, roll and store chocolate panels to cover my cakes; we will talk about my favorite techniques to decorate chocolate panels ahead of time, and how to pre-roll sugar ruffles for easy application. We will also talk about making beautiful floral appliqués and I will demonstrate the foundation of my signature statement flowers and fillers!. The recipe for my signature rolled chocolate is included, as well as a broken down list of my favorite tools and resources!. I can't wait to be able to share this class with you :)
